Welcome to our FLIPPING FOR FAMILY CARERS fundraising campaign! We want you to have some fun on Pancake Tuesday, 16th February, all in an effort to raise money for Ireland’s family carers. They have been the hidden heroes through this pandemic and thanks to funding from kind people like you and companies around the country, we have been able to support 1000s of them through our Crisis Fund.
All monies raised will go to supporting carers most adversely affected by the pandemic, so get flipping your pancakes, donate €4 (or more!) and share it across your social media or WhatsApp groups. It’s that easy!

We welcome Ireland’s favourite blogger The Wonky Spatula (Nicola Halloran) who is kindly supporting our campaign alongside our friends at Horizon Therapeutics.
The Wonky Spatula’s perfect pancake recipe!
1 cup flour
1 tsp baking powder
1 tsp cinnamon
2 tsp vanilla extract
1/4 cup of apple puree
1 tbsp of maple syrup
1 egg
1 cup almond milk
Pinch of coarse sea salt
Your chosen oil
How to!
Combine all of the dry ingredients with the egg in a large bowl.
Slowly add in the almond milk until the batter has formed.
Lastly add in the apple puree, followed by any remaining almond milk.
Whisk together all of the ingredients until smooth and allow to rest for 5 minutes until the batter has thickened.
Heat a large frying pan with some oil, I like to use cooking spray for these.
Using a ladle, spoon the batter into the pan and cook the pancakes (3 at a time) for 3-4 minutes on one side until the pancakes start to firm up and bubbles appear, flip and cook on the opposite side for a further minute.
Serve and enjoy with your favourite toppings!

Flipping your pancake is the star of the show, so before you get some ideas on how to fill your pancake before munching it down, here’s some tips on how to master the PERFECT FLIP.
FCI FLIP TIPS!
Maybe you should do a couple of practice runs before the phone comes out! Any four legged household pets like this approach in the hope you FLOP instead of FLIP!
Cook the pancake on one side…..let the bubbles slowly appear and when cooked it should come away from the pan when you give it a shimmy shake.
The weight of your pan really will dictate whether you do a one handed flip or two! Simply tip the pancake to the edge of the pan and three, two, one… FLIP! Remember – put your Masterchef hat on and apply the same action as you would use when making a stir-fry with a wok – it’s just about employing a confident flick of the wrist! You can do it!
Cook it on the other side and flip again if you like!

Keep it old skool! A good squeeze of a fresh lemon and a dusting of sugar! Fold and EAT!
Go all out chocolate heaven! While your pancake is hot, spread a generous dollop of Nutella onto half of your pancake. Reach for a packet of Buttons and add them to the top of the bed of Nutella. Fold the pancake and return it to the heat – just enough to melt the choc! YUM!
A fan of Salty & Sweet? Like a dollop of ice cream? Then this one is for you! Add 1tsp of fine sea salt to 4tsp of caramel and give it a stir! Taste to make sure you’ve enough salt and shimmy in some more if you need to! Onto your deliciously fresh pancakes, spoon a dollop of vanilla ice cream. Then, spoon your salt and caramel mix into the top. We know. Enjoy!
